WoW graphics fit WoW, that's why you don't see me complain about WoW's graphics. It fits the lore and the setting of Warcraft. Other people complain about WoW's graphics due to the artistic style, that's why you heard the word "cartoonish" tossed around.
But this is a dumb thread as the OP tried to compare WoW to games much older, games that were first generation, one of the first ones ever created.

Immersive gameplay. It's pretty difficult to achieve given the gameworld Blizz provided. I don't need things to be 'ultra-realistic'.... but somewhere in the ballpark would be nice.
It's so funny to see ppl say here that WoW's graphics are good 'for the time it wsa released', while they're just very poorly designed. I'm not talking about the artwork here, just the graphics itself and the engine as a whole (though I got to say I like the UI that you can modify).
When I compare WoW's graphics with the other AAA-titles released that same year, you see why WoW's graphics is so poor. I'm talking about Lineage II, and EverQuest II. Though EverQuest II's graphics is better than that of WoW, for that time they were real bad, since no computer at the time could run the game at a decent rate while it was worth looking at. Lineage II on the other hand has some kick-ass graphics and an excellent engine too. I started playing L2 in 2005 (Chronicle 3 at the time) and loved it compeltely.
An other way to compare the graphics is to install these games on an avarage system of the time. Last night I installed EQ2 on my old (2002) laptop (Pentium M 1.6Ghz, 1.5Gb geForce go FX700 128Mb), and I could run it but on lowest settings. Lineage II I can run very well on that same laptop. I haven't taken a look at WoW, but when I compare WoW and L2 on my current system on the max, WoW clearly runs heavier, so I guess it won't be pretty to look at on my old laptop.
ill take WoW graphics and art over L2 and EQ2 any day of the week . L2 always comes off drab and flat in my opinons and EQ is ok but nothing special. But the both do look more "realistic" but realision isnt something i first look for when fighting trolls and dragons. WoW art , its design style, its color palette all fits the fantasy feel its going for. Everything does not have to look hyper relistic to look good... take Sin City if they would have went for full color full realisim it would not have fit the story the same. Same can be said for a lot of things, Shrek, Zelda , Kill Bill ( story layout wise) etc.

What's wrong with DAoC's animations? I always loved them. It Has to be one of the first MMOs that connected combat abilities to animations, and did a darn fine job, imo. Even some newer games don't show block and parries like DAoC does(WoW comes to mind), and its 10 years old.

When I started playing MMORPGs I had a lousy computer so I always had to run them at low settings. So I got to love MMORPGs for the gameplay and not the graphics. I can now run the games at max settings but frankly in does not make much difference to me and I would not mind if I my characters were stick figures if the gameplay was really good.
I just never liked the cartoony feel of the selected art style for fantasy and that meant I never learnt a thing about the game. The style is intended to appeal to kids more generously I imagine, albeit the strong colors are positive and they have aged incredibly well etc... but for crying out loud, not for me!
Wow's art style can basically be described as "You got Disney in my MMO". Tried it when it first came out, hated the art style, didn't find anything else about it that worthwhile...moved on.

Outlaws looked good back in 1997 and it still looks fine now becouse it has style.
I think there are a few problems here. Those who want to defend WoW based on "art style" are ignoring the glaring problems with the graphic qualities that are independant of the game's style. Love or hate STO it has an "art style", but still has high quality graphics (if you have the system to run it).
Now WoW was released shortly after SWG and SWG had much better graphics than WoW. This is why some peoples expectations were higher for WoW. Another example is CoH which also had an artistic style of it's own, but the quality of graphics for the time were high. Art style does not account for the low polygon count that WoW graphics have.
Now when comparing WoW to EQ (the original) a game made in 1999 (not 2004 when WoW was made) and DAOC made in 2001, people don't have the same expectations, these were gen 1 (1.5 if you're an old school MUDer), WoW was gen 2ish and so the expectations were higher.
Graphics are not the end all be all of gaming, but we are getting to a point where they do matter more and more.

Everyone clearly has their own definitions for what is what gen, but I tend to look at EQ as first Gen even though it wasn't the first. It was if you will the WoW of it's day, so I define first gen by it.
EQ's graphics were good when they were released. They still aren't that bad with the recent overhauls. I always found WoW's to be very subpar from the time of it's release, with its stagnant defenders saying it is the 'art style'. What is visually pleasing to one person may not be to another. I also think graphics and point-of-view bring a certain level of immersion which may differentiate some opinions.
When some people say graphics, they mean quality of the graphics.

WoW's graphics were intended to be cartoony and silly. It's not a serious game and neither was the art style intended to be. WoW is the saturday morning cartoon version of MMO's. Nothing wrong with it if you like that kind of thing, but not everyone likes that kind of thing. So some people complain about it.
Go back to Warcraft and listen to all the things the silly cartoony chars said when you clicked on them or when they finished a task.

Also, keep in mind, WoW was designed artistically with its painterly style (which is actually what they call it), because it's consistent with the style used in Warcraft III. Second, you talk about how "WoW sets the bar for all other games" and how they should be kicking ass in the graphics and art dept... Umm... WoW was designed with that graphics style from day 1. It didn't become the top dog in the market until months after its launch. At that point, the look and feel of the game had already been established.
I'm not sure exactly what it is you think they should, or even could have done. Should they have invested in a crystal ball that would allow them to see into the future, to the overwhelming success WoW would see, and say "Oh my! We're going to be number one with millions of players worldwide! We're going to set the standard for other AAA MMOs to follow! Surely we must do something more fitting with our graphics if we are to have that position! Back to the drawing board!".
Also a minor detail, but WoW reached its place at the top of the heap with its current graphics and art style. Though, the graphics tech beneath it has been continuously improved. They are doing things with their technology now that they would never have been able to back during vanilla and TBC.
So, perhaps it's not about "Blizzard should be doing better", and your whole deal is simply about you not liking the style, and wishing they'd used a style you find favorable? Hmm... could be.
Personally, I admire Blizzard's use of tech in their game. They use art to establish the look and feel of the game, and they use tech to enhance it. Technology ages and looks "dated" over time. Art looks as good 10 years down the line as it did on day 1.

i like wow's style. I am not a fan of "attempted realism" in graphics. The harder games strive for real lookiing graphics the further i run.
its just preference really and i enjoyed wow's graphics, and fluid gameplay.
what i didnt enjoy was when they introduced rep grinds, that every other game incorporated and now i hate 90% of all mmo's. Somtimes i miss wow but i think the model got old after one xpac
