I guess we'll see in Charr week, but... consider this: They don't do concept art for nothing, and a lot of the concept art has made the transition from art to in-game. Like the Divinity's Reach jukebox, for example, which looked utterly silly but it's still there. Usually if they're doing concept art, they're prototyping for something, and there's a lot (a lot!) of Charr concept art featuring various kinds of war machines, from tanks, to airships, to helicopters. And what's been linked in this thread and in others is only scratching the surface, and if you want I oculd show you even more, like the Charr airship construction yards.
I just find it difficult to believe that they'd have all that concept art, so much of it, if they intended for none of it to make a transition into the game. So I think that, therefore, the reason they've kept so much of the Black Citadel from us, and so much secretive about the Charr, is because a lot of it will get in there. In the small glimpse they gave us of the Charr with Steeleye Span, we already saw mortar guns, compact cannons that could be constructed on the spot, and various other forms of technology. So, for me it's not outside the realm of the conceivable.
Consider that each race has its schtick. If the Asura get a city on a floating cube, is it really that strange to expect to see airship yards and tank construction sites when wandering the Black Citadel?
Edited to add: Also, stationary things like mobile flying platforms for us to fight from wouldn't be considered in-game flight as such because we wouldn't be controlling it and it could just be for dynamic events, piloted by NPCs for pathing, as I've mentioned elsewhere. If you think of it, the Asura city is flying, so a flying Charr weapons platform wouldn't seem that strange. We don't control it, but it's there.

One thing you have to remember is that a lot of pictures shown by the artists on other pages, unless explicitly listed under the GW2 page, or as a GW2 piece of art, aren't necessarily for GW2. Daniel Dociu's helicopter might be for something completely different, since it's not on the GW2 page.
Also, there was a LOT of concept art for things like spears and 2 handed axes, neither of which made it into the final game.
... and they've mentioned before that a lot of times the concept artists just draw what seems cool to them, and that the stuff may or may not make it into the game.
That being said, I think there will definitely be a lot of technology shown at the Charr city, but they don't have to keep strictly to anything just because it's shown in concept art.
I think it was all Guild Wars 2, actually, since I made sure that my sources cited it all as Guild Wars 2 art. And here's another example, of a Guild Wars 2 concept art reel shown at Comic Con, meant to depict the game, with a large section of it featuring airships of very complex construction, so with this much evidence it's unlikely that it won't show up in the game. But I suppose there are people who won't believe it until they see it in the game themselves.
Seriously though you just don't have that much detailed concept art for something that doesn't exist.

(I mean, they have a large amount of concept art that's based entirely around Charr vehicles, lots of it, on the gallery and at various other sources, in videos they've aired, and all of it marked as Guild Wars 2. If a number of these vehicles don't make it into the game, then it's going to be very misleading. And again I'll say that this is a lot of detailed concept art focusing on one topic. The selection of airships in the video above is especially telling, since that looks like they were trying to get just the right sort of look for a model, and it's how these things are usually gone about. I'd be amazed, frankly, if there were no Charr vehicles in the game, even just as background decoration.)
I'd like in-game books, rare tombs of lore and histories and stories and riddles and apocryphal writings in strange tongues etc... the puzzles/information/riddle/problem-solving stuff that these can contain as well as typical Tyrian humor and so on... eg clues about some crafting combo, rare item or long-dead adventurer's log etc...
Well...I don't know about apochyphal, but Anet has already shown off New Krytan that you can read in game.

Each statue contained a riddle, after answering so many I received some sort of reputation/loyalty point/currency. Once I was near the top there was a dead NPC that I rezzed. Once I rezzed him I was allowed to turn in these points/currency for different "spirit" buffs. They were combat buffs that lasted like 30 minutes or so. They where like "Spirit of the Raven" or some such. There were ton of them going up the hill with a really large statue at the top f the hill. However you had to do them in order and since I was on a timed play session I didn't bother doing all of them to unlock the large one. The riddles were pretty cool, they were like "I cannot not be seen or touched, fire feeds on me." Then you got several answers to choose from.

Yes that adds up The Raven Totem obviously involved in Riddles and craftiness/wisdom as Raven/Loki are the symbol of this... hopefully the Raven Story arc for the Norn will be HEAVY on the riddles/puzzles/books etc! I hope we hear the correct "Kroak" vocalizaton and not the Crow's "Caw" vocalization
I can see them doing something with air ships or tanks in the personal storyline, but out side of that it would probubly be extreamly limited.
I do remember however when watching the videos of Anet making an event with fans, one of the ideas was to have players hop on war boats that had mortors they could fire to attack an evil slaver race, so it might be in the game to some extent. No mounts though.

Ahh that i would guess is charr industy if you read lore of charr you will see that they use those things, its not totaly future or anything and i think its gonna be cool, but its the lore of charr so i think its gonna be in game, if you don't like it play a human like me! ((And thanks for the pic didn't see them xD))
One thing i like to see in GW2 is well something that no other game have had yet

I think SWG might have had waltz. I know the entertainer profession and more specifically the Dancer profession from pre-nge had a lot of different types of dances.

I'm not a fan of mounts either so I'm on your side, here. I'm just thinking more in the way of environment decoration and aspects of dynamic events, to be used only in those dynamic events. I can see this happening though, because wherever I've observed a focused collection of concept art before, it has been in the game. Look at hte Guardian as an example - lots of people had it figured out that there would be some sort of Paladin-like class in the game early on due to all the bits of concept art that implied it. They get to do what they want in the way of art, but... why would it be in official art presentations aired at conventions if it's not something that they're working on?
So yeah, I can definitely see it being in the game. Not as mounts, because mouonts are annoying (waste of money, invites grind, is a status symbol, et cetera) and unnecessary when we have teleports, but... yeah, just as decoration and dynamic event vehicles, since that'd be awesome.
I want to see Mounts and MMorpg without mounts is really hilarious i mean cmon anet u took time to create such good game at least put some mounts /flying mounts in it will give more plyability...
