I don't think there are any RPGs I haven't played. I have spent a lot of time playing the below games:
The elder scrolls series, Mass Effect series, Diablo series, Baldur's gate series, Planescape Torment, Fallout series, HOMM series, the Ultima series, Might and Magic, Icewind Dale series, Gothic series, KOTOR series, Witcher series and Neverwinter Nights series. I have played another 50 or so RPGs but definitely didn't beat them all, some of them I've only played for like 1-5 hours.
Mission in life: Vanquish all MMORPG.com trolls - especially TESO, WOW and GW2 trolls.

I have played The Elder Scrolls Series, Baldur's Gate 1 and 2, Icewind Dale 1 and 2, Neverwinter Nights 1 and 2, Dragon Age Origins, Mass Effect 1 and 2, Dungeon Siege 1 and 2, Diablo 1 and 2, The Witcher, Fallout series, Fable 1 and 2, Wizardry series, Might and Magic series, Planetscape, Star Wars KOTOR 1 and 2, Arx Fatalis, Gothic series, Titan Quest, Sacred, Ultima series.
These are the ones I have played and really enjoyed. There are quite a few more but I don't think I can remember any of their names mostly because they were mediocre or were entertaining but not really memorable.

I'm a huge Tolkien fan, love the world, the characters and how they modelled the story around it all so that it still (more or less ) makes sense. And honestly, just running through the Old Forest or meeting Elrond in Rivendell was worth playing it, hehe.
I also like Rift a lot, though I haven't played that one too much so far for time reasons.
I've stopped playing WoW before Cataclysm came out so I can't really comment on how it plays now but it got boring for back then after a few months. I don't really like the story too much (or actually I might like it, but you really don't get to see a lot of it during the game and I didn't like that at all... it was just quest grinding somehow).
Warhammer wasn't my kind of thing - too much focus on the fighting.
Aion was nice in many respects but the quest design was boring - way too much running around (I only played up to level 24, though, maybe it gets better on higher levels). The visuals were awesome, though.
Guild Wars would have been a cool game, but due to the instancing of everything but the cities the world seemed really dead and deserted and I didn't like that at all. You felt as if you were one of only a handful of people in the entire world, which was ridiculous.
Courious about GW 2, though. Will definitely give that one a try.
What I haven't tried out, yet, is SWTOR, but I'll do that as soon as Summer Holiday starts

Been looking for an RPG to revisit and going through this thread has given me several ideas. Time to head over to GOG.com and see what's available.

Generally speaking, I tend to only enjoy western RPGs, so my favorites are the KOTOR series, Neverwinter Nights, Fable, and Morrowind, Oblivion, and Skyrim.
If Shenmue counts as an RPG, I love both of those games as well.

I know good and well I haven't remembered them all. Lawdy if you ask for adventure games my brain will hurt even more. Some of these games I didn't finish, others I did and even replayed. It just depended on how much I enjoyed them.
I've played more RPGs that I can even remember anymore. But a few that stand out as favorites:
Phantasy Star IV: I love the series' quirky mix of fantasy and space epic, and this game just had great characters and FELT epic.
Tales of Phantasia: Really, ANY Tales game belongs here, pretty much. But Phantasia had brilliant writing, insanely funny dialogue, and a for-its-time innovative combat mechanic. AS much as it gets panned now, I still love Linear Motion Battle.
FFVI: Can't be an RPG list without a Final Fantasy Something on it. But VI is the one that made me love the series.
Chrono Trigger: Dear Bioware, THIS is how you make an RPG with multiple endings. Hell, this is how you make an RPG. PERIOD.
In fact, nearly everything Square and Enix have done over the years that was NOT Final Fantasy (Except The Bouncer. That never happened.)
