SWTOR is just single player wow. The PvP is average, nothing special. The raids are ok, but nobody did them when I played. Questing and zones were so boring. Interiors were all reused/rehashed textures and layouts. Dungeons were generally fun. Combat is Tab Target.
ESO is also single player. PvP is fun, when people play it, which hasn't been lately as there is just little incentive. Trials are fun from what I hear (12 player raids running about 2 hours each) but you have to trudge through much leveling. Questing is a lot more fun, but similar to SWTOR. I felt it was less grindy though. You almost never get a quest kill 24 this, or 30 that, but in Swtor is happens a lot. Varied zones and textures, interesting landscapes and fun to explore world. Dungeons are a blast but harder to find a group to do them than in swtor as there is little incentive to run them more than once. However there are many dungeons in ESO. Combat is free aim with 5 abilities for each weapon (2 weapons can be swapped mid-combat)
Voice Acting is better in ESO as well, but the decision to be Sith and Jedi was pretty cool in SWTOR.
I vote ESO, but if you can't decide, just pick it based on Elder scrolls vs Star Wars.

SWTOR was a disaster after 2 months and people left in drones, forums were full of complains:
* pvp planet was not playable and shutdown
* open pvp areas were empty
* massive complains about a steril and dead game world
* Huttenball matches instead of StarWars
ESO has its problems but SWTOR was for sure not in a better position despite having the biggest brand "StarWars" as a background.
Only the F2P model did help SWTOR otherwise they would have shutdown servers probably.
There was a massive hype about SWTOR wheras ESO got negative press before release.
