I might have to go with KOTR 1&2.  Probably depends on the day you ask.  So many really good games.

I think if we are honest though, at what point we play a game in are life has a lot to do with how much it means to us.

“It's unwise to pay too much, but it's worse to pay too little. When you pay too much, you lose a little money - that's all. When you pay too little, you sometimes lose everything, because the thing you bought was incapable of doing the thing it was bought to do. The common law of business balance prohibits paying a little and getting a lot - it can't be done. If you deal with the lowest bidder, it is well to add something for the risk you run, and if you do that you will have enough to pay for something better.”

Torment: Planescape, Fallout 2 or Baldur's gate 2. These games represent the genre in it's most classical and rarified sense.

Because updating an engine and tweaking assets is easier than rebuilding an entire game.
Agreed. Yet they would make a ton of money on it so I think the ROI would be there. Morrowind is almost universally adored.
It's strange we don't see more   remakes for classic games like we do for movies. A Morrowind remake would   probably  sell more copies than Skyrim.

At least we can put our hopes in Skywind. This is probably the most ambitious modding project ever for   an Elder Scrolls game. Even more so than Tamriel Rebuilt.

Also the System Shock remake looks incredible. Another classic game.

I am a huge fan of the Skywind project. It was always a much more interesting setting than Skyrim.
Morrowind may have had a smaller map but it was way more interesting to explore. Which made it feel bigger in comparison.

I hope the Skywind team do finish it one day. Even it it takes another 4 years, I can wait.

Dragon Age Origins. I would give my life for a MMORPG in the Dragon Age Setting.

My favorite RPG is Undertale because it focuses on the story and characters instead of the gameplay. Even when it does focus on the gameplay, it does it right. Avoiding all the unique attacks from enemies by controlling a heart is very unique since in most RPGs you will always get hit unless there is some form of 'agility' or 'accuracy' stat in the game. And in undertale you only get hit when you can't react fast enough and it really focuses more on your reaction time rather than your strategizing skill. The story was absolutely amazing since you could easily experience the whole thing in one sitting because the game isn't too long. The ability to play the game three different ways is really awesome since each way to play is different and is its own unique experience. Does anyone else love undertale as much as me?

When you guys were talking about some of the old classics, one bad memory that brought back for me was waiting weeks for patches to come in on floppy disk by snail mail. Can you imagine doing that, heh? For example I don't think I ever did make it through Ultima Underworld because of the bugs. And the hassles involved with updating by mail.

Anyway, I'm going to say my favorite RPG was a mmorpg - Asheron's Call 1 (AC1). The players themselves were the high quality content, and the game made the interactions possible using now completely "outdated" mechanics. God forbid things like years long leveling curves, corpse runs, intricate crafting, complex loot and damage types, etc..

It was my first 3D MMO and I have some fond memories... although corpse runs are not among them.

I was bummed out for a while because my swords couldn't hurt golems. But then they added blunt swords and all was well. :)

And that wacky guild pyramid scheme (where some of your XP was passed on up the line to your recruiter, and up to his and so on, all the way up to the guild leader) has never been duplicated to my knowledge.

Man there's way too many to list here.  I'll give honorable mentions but what is the best isn't easy for me to decide.

    KOTOR 1-2
    Assassin's Creed Black Flag
    Secret of Mana
    Metal Gear Solid V
    Final Fantasy 9,10,12
    Neverwinter Nights entire series
M&B Warband- not sure this counts though.
    Suikoden 3
    Xenoblade X

Are you onto something or just on something?

Baldur's Gate 2 would be my choice, and a hard one as there are many games that could easily be on top. KotOR and Diablo 2 come really close.

I would also like to mention.

Divine Divinity-  The most underrated RPG I have ever played.

    Lunar: Silver Start Story

This game had dragons and an epic story line.

You start off as a kid named Alex and gather your friends for an adventure. Eventually you become a Dragonmaster with lots of turns along the way. The gameplay and the story line were just far and away the best thing ever for me.

Commander Keen, which I just found out is on Steam.  Better than that for me was 'Out of This World'  this game I loved and played a lot.  They have it for the iPad.

All time? That's a tough one. Because there are lots that have come out in the last 5 or 10 years that are just amazing. The Mass Effect Series, the Witcher series, the Dragon Age Series, Skyrim, the Assassins Creed series, there are just so many I could go on and on.

But for me, you need to go back further. To the game that started it all for me. Knights of the Old Republic 2 (and I know most won't agree with me). I didn't play number 1 until after I played number 2 and the second one changed my view of computer gaming forever. The ability to actually choose and have it matter. No other game had ever offered me that ability before. I have replayed them both (with and without mods) so many times, I've lost count. And every once in a while, I rebuy them again to play them.
