If I remember with druid,you can do it in bearform with ease, its just a bit slower. And now bear has 450% armor and nature's grasp which can be used in any form.
All classes in WoW can solo. However some are easier than others. Here's my view:
Easy classes to solo:
Hunter (beast-master spec is good for soloing)
Warlock (especially affliction spec)
Feral specced druid
Rogue
Medium soloing:
Shadow priest (possibly easy, not sure)
Arms or fury specced warrior
Mage
Retribution specced paladin
Shaman
Relatively hard soloing:
Holy specced priest
Prot warrior
Restoration specced druid
Holy specced paladin
Out of the above classes, hunter is probably the easiest for a beginner to solo with, but could cause you problems if you later decide to join a group. Playing a good hunter who can contribute to a group is difficult due to the variety of group roles you may have to perform (pulling + healer protection + crowd control + dps). I should also warn you that hunters are probably the weakest class around level 8-9. The ability to acquire a pet at level 10 makes a huge difference (don't worry - these levels pass quickly).
For a class that solo's reasonably well and is also easy for a beginner to play in a group I'd recommend rogue or mage.
Shadow Priest is one of the easiest solo grinds post-40 of any class I've ever attempted. At level 69 (currently) I have no down time. I can also take on three or four npcs my level and come out with moderate mana and hp.
Although, to answer the OP's question. All classes can be specced to solo rather well. Rogues have combat, Mages have frost, Druids have feral, Warriors have fury, etc. Every class has a "PvE" spec.
The real question should be, what class is fun to play after I solo my ass off?

Druids and Priests can fill multiple needed rolls in a group (Tank, Healer, or DPS for Druid, DPS or Healer for Priest)
Hunter, in my opinion, is the worst class to level up and play with. Sure, you can solo grind, but in groups you can be replaced by almost any class without losing anything. In fact, having a shadow priest in the place of a hunter is more beneficial. Instead of a ranged DPS class I have a ranged DPS class that can pop out of shadow form and heal.
I give it to the hunter. They can solo quickly with little to no downtime and are able to take on elites their level with slightly more effort. Since the pet doesn't have an area effect taunt, they can have problems with multiple mob fights. Limited ability against caster mobs, but pet seems to absorb spell damage well enough to survive most fights.
Second place would be a tie between paladin and druid. Both solo well, albeit much more slowly than a hunter, but they have greater survivability if multiple mobs join the battle. They can both solo elites their level with slightly more effort, but suffer more downtime than a hunter. Caster mobs can be a problem for the druid since they have limited ability to interrupt casting. Paladin does well in this area thanks to stuns.
Third place would go to the warlock. Good soloer with regular mobs and can take on multiples fairly well thanks to voidwalkers area taunt. They are unable to take on elites their level without fear kiting, which can be very dangerous. The problem being that the pets can't take the damage elites deal and also cannot keep aggro since you have to lay the damage on thick to take an elite down. Little downtime with regular mobs, lots of downtime with elites.
With PvE raiding, it has never been a question of being "good enough". I play games to have fun, not to be a simpering toady sitting through hour after hour of mind numbing boredom and fawning over a guild master in the hopes that he will condescend to reward me with shiny bits of loot. But in games where those people get the highest progression, anyone who doesn't do that will just be a moving target for them and I'll be damned if I'm going to pay money for the privilege. - Neanderthal
i logged onto a hunter alt after like 6 months not playing(forgot to spend my talent points,get upgraded skills,and was using lower lvl ammo)and was chain pulling with no downtime.after a few mins i checked my skills,upgraded..and laughed
This class is hybrid class, meaning it can dish out a fair amount of DPS, take a fair amount of damage and heal. Thus not exactly lacking in one or the other, yet not acceling in any of them either.
Making it a great class for soloing, the paladin can induce various abilities that alow it to stay alive long like stuning the enemy for a fair amount of time, giving him chance to heal up, and maybe get a few finishing shots in , therefore giving them the ability to get themselves out of most "sticky situations".
The paladins also have a protection tree for tanking, although not favoured on due to abilities that in gaining threat, causing the target to stray away and manipulate your allies.

I haven't played a paladin, but I wonder if low dps a problem for paladins soloing at level 40+? Do you have problems with excessively long fights, and areas respawning around you whilst you are still killing the original inhabitants?
- Hunter (Pet spec :P) : Little downtime, you can still fire arrows without MP.
- Warlock (demonology) Hardly any downtime due to "health stealing" and "convert HP to MP" and pets are STRONG!
- Mage (ice) Slow/stun/freeze high DPS, downtime for drinking/eating.
2nd best choice would be warrior for me, Fury/Arms warriors can pretty much solo alot, Downtime for eating.
I atleast know that Priests are the worst soloing class, if you spec shadow your healing sux and cancels out raiding (If guild prefers holy). And the so called "balancing due to PVP" al the nerfs makes it suck. (Played it back in beta days and it was awesome compared to now)

Pallies are useless. I would say a Tauren Shaman is the best option. Pallies shield and heal almost constantly. Shamans can lay totems, cast spells, and fight, all as good and/or better than any other class. They level up quickly if you know what you are doing, but interface menus can get crowded quick. Also, shamans can operate much better in parties. You tank, you heal, you rez, and you spellcast. The only thing they can't do is stealth. They are also better when you get to the level 38-45 range because your ghost wolf abilities really pick up, giving you a better alternative to mounts until you can afford one easily. Also, the most important thing you can know about WoW, is that over 45% of the Alliance players are under the age of ten.
Hunter has the edge over lock for me because unlike a lock you can become attached to your pet(s) I still have "steven" my first pet who i tamed when I was lvl 8, i swapped him infavour for a bear "jimmy" at around lvl 25 cus he helped in dungeons, I then got "boris" my boar at lvl 58 and hes been with me ever since, I need to tame one the new animals to learn the new pet skills but I just cant abandon any of my 3 pet becuase I love em .

Hunter, Rogue, Mage, Warlock......................
Hunter has a tank with little downtime.
Rogue has lots of DPS, downtime for energy regain and bands for health.
Mage has lots of range DPS, downtime for drinking (mana/hp).
Warlock has a tank with lots of DPS (SB, Dots), downtime for drinking.
You guys seem to be forgetting the paladin.

well when the class has a pet in any game it seems to be the best soloer, so Hunter or Warlock.
