They could be mean and close test it until the absolute last possible day. Which I'd prefer, that way, we'd see what they want us to see, and when your telling a story, thats important.

Possibly. Whilst it'd put cautious people off, it would bring in the curious.
What I don't understand is why people ask 'How do you know its going to be story based? How do you know your decisions will impact your story?' Well for starters, I've never played a Bioware game that didn't force me to pay attention to who I was conversing with. Otherwise I wouldn't know what the hell to do next. Granted the second or third times I played through them, I skipped minor stuff. However, that shouldn't be a problem. I'd be surprised if there were too many people who wanted to make two jedi knights, or two bounty hunters.
As for 'skipping' through the dialogue. You'd be your own worst enemy. Accidently clicking on an action or making an uninformed decision which alters your story to a place you want it to go. Maybe you'll saber a padawan when your just an impatient player, who loved their jedi knight. Congratulations your now a dark jedi. Pay attention next time!
I think they know they have to keep you interested in the story, hence the army of voice actors they've employed. It's a good way to make dialogue floating across a screen seem fresh and engaging.
I'd like to also ask, why, why are people saying this game is going to be heavily instanced? That it won't be open world? They've already stated that the game will be around 10% instanced. That's like Lord of the Rings Online. You can't deny that Lord of the Rings had a beautiful world to explore, just with slightly conflicted character models. (SwTOR: "Ooo snap") They've also said that every world is 'Massive', and that you can pick a direction and run off in that direction for ages. I have no doubt the world will be very open. I also imagine that the open area of the world will have the 'creatures' and 'wild spawns' of npcs. I feel the will just make huge open areas between settlements, towns, villages and cities, with a few sights of interest in between. That way, they allow for gathering of crafting material, room for mounted vehicles *speeders etc* and tick off the 'Open world area' box in the process. Judging from the pictures I saw of Alderaan it does look like it could go on for much much more. We will have to wait and see.
