My favorite thing is the threading it does with replies being sent back and forth. You have a conversation with someone in e-mail and it keeps it in one thread, much like these forums.
Another thing, for instance, is when this web page sends me notifications about new posts on threads I subscribed to, all of the notifications are in one line item... Instead of cluttering up my inbox with hundreds of individual e-mails, it keeps them in one thread.
The searching is awesome too, but it's Google. What do you expect?
Also, it is fast, without a ton of graphics--especially banner ads, which slow down other free e-mail services.
1 GB of space for a free service and, what is it, 10MB attachments? That's pretty damn good!
When someone quotes your text in a reply to you, Gmail detects this and automatically hides it so you can get right to the point. You can easily expand the quoted text if you want to see it.
And one last thing I like: The Gmail notifier. Tells you when you have e-mail and it's a light-weight app that is non-intrusive (as opposed to MSN Messenger).
