I've loved every profession I could play properly... heh. Guardian, Necromancer, Warrior, Ranger.. those 4 I've been able to play to a reasonable level and I plan to tackle the rest later.
I intend to play either a human or sylvari Ranger at release, so I played a charr Engineer, norn Mesmer, and human Necromancer in Beta. I must admit that I quite enjoyed all three professions, but I still intend to play a Ranger at release. At the end of the Beta weekend I focused on crafting. I didn't get very far, but I intend to focus on crafting again on Monday night (after work) and during the next Beta weekend. Like someone else said, I did not venture out of the starting areas, because I want to keep the game as fresh as possible for launch. I really love what I've seen in this game so far. Part of that can be attributed to it being new, but most of it is content, combat mechanics, and playstyle freedom.
Always wanted warrior as my main, but made charr ranger to try a little, then switch to warrior. When I somehow bugged a NPC in personal story, I couldn't continue further in progress, tried with reseting quest/restarting game, filled report and... couldn't log again in game for 2-3 hours because of full server. When I finally logged in, scared that I might need to reset game again because of bugged quest (and again, waiting for login), I decided to try Mesmer... Then I never looked back to ranger, not even made a warrior.

as far as i heard..ALOT of people changed proff. over the beta...i myself choose the right proff from the start so ill yust stick to it :P
