Morrowind was the last of the real open Elder Scrolls games. They really started to put a lot more structure into the game after that. I can understand why but it did close in the game a lot. I have probably north of a thousand hours in Morrowind and never finished the main quest line. There is just to much to distract you and pull you away from it.
Skyrim, no doubt about it. Why? Because it finally does away with the ridiculous leveling system which plagued previous games. Trying to build a mage? Better walk everywhere, because running too much will raise that skill, and force you to increase an undesirable stat come level-up time! Happened all the time in Morrowind and Oblivion, and it drove me freaking crazy.
That, and they fixed scaling & it works pretty darn well. If they add in the ability to create your own spells again for the sequel, and expand upon the crafting system to make it rely more on skill than grind, it'll be just about the perfect game IMO.

I wouldn't play it again, but Morrowind. (Because I played it for 3 years straight back in the day and hate the combat system) It was a truly in-depth, fascinating RPG that didn't insult your intelligence and there was no voice acting. I much prefer imagining what a character sounded like.
I voted for Morrowind. The boss fight was epic as you made your way to Dagoth he would talk to you it was really cool. Plus you could ruin your chances of winning the game by killing some one related to the main quest line.
