I know that this is going to sound funny, but my favorite class is one that hasn't been created yet. I usually play a Rogue/Ranger/Assassin, and sometimes a Sorcerer (depending on the game), but I still haven't found a class that I can call my favorite.
This is why I was waiting on CoE, but from the sound of it, it's future is uncertain. I'm looking for a game where you don't have to choose from their classes, but rather, you can create your own.
Currently, I prefer games with a soul tree, where you have a number of roles for each class.

Seeing WAR makes me sad... So much fun and such a great game just pushed out to early by EA. I also played a White Lion loved the unique classes each race had. Also each race having its own starting zones I think WAR was the only MMO besides wow I maxed out like 5 or 6 different characters
Not completely sure it was EA that snuffed it. I, personally, feel GW was behind something because I have read around that when it comes to their license they can be incredibly difficult to work with.
That being said I don't think there wasn't a class I didn't like in WAR. If I had to choose though I would say Witch hunter or Rune Priest were my top. Sadly, while the classes were fun to play, it wasn't even the playstyle I got interested in but the lore behind each class. I mean the classes were fun to play but WAR actually made me look into the Warhammer world and fall in love with it.
WoW Druid. I had trouble when I was new fitting into a class. Eventually after my third alt, I went with Druid since it can perform all roles so I could see what I really wanted to play. Tried Feral but ultimately ended up on Boomy for many many years. PvE and PvP, before they ruined it with Legion, along with the rest of the game. I also enjoyed SPriest too, in Cata & MoP, Legion ruined SPriest. And I always played a Rogue but mostly on the PvP side of things.
In other games, I usually play Rogue since I haven't found a game yet that offers the same uniqueness that the laser chicken does from WoW.
City of Heroes I really enjoyed my Defender, but only while I was playing with friends, other than that I'd be playing a Scrapper, with the spikes/regen combo, pretty popular, extremely fun.
When all is said and done, more is always said than done.
I just don't have any motivation to log in to TOR. They have really shafted non-force users from a storytelling perspective in that game imo.

Any Vanguard class ............still the best assembled group of classes in any MMO to date
UO doesn't have classes per say but if we are going template then mine would be the necromage. If we are going before Age of shadows, then Treasure hunter. Loved my t-hunter.
Holy Priest from World of Warcraft and Conjuror from FFXIV are my personal favorites. There's something to be said to being the robed healer keeping your allies from falling over the brink that just raises the blood in me.
Agree on the Mastermind, Mike, it was my favourite too from CoV BH not that much, Agent has better story and I like the Trooper too (gameplay-wise none of TOR's classes are "favourite" for me, but the class stories are really good).
My own favourites, that's tough, there are too many games behind me If starting with the main games, bear shaman from AoC, warden from LotRO. (honorary mention from my class-less main games, a shield-heal/buffer Sci captain from STO, and AR/Blood healer from sadly departed TSW)
Other good ones worth mentioning, Chloro from Rift (with a special blend ), and Slinger from Wildstar.
Since I'm more interested in the story and not the combat part, classes only memorable to me if they have some twist (like the pet management for Mastermind, the combo/gambit system for bear shaman and warden, the fairly unusual heal with Chloro and Slinger, etc.) which makes them fun.
Pretty much everything from CoH except the Blaster. Nothing wrong with pure DPS but that was never what I was truly interested in. Dominator's control made them far more appealing. But I really liked the controllers, MMs, defenders, and even the tanks/scrappers. I have to admit, I never really liked the squids though. Whenever you had one in group, you'd have a chance of encountering those anti-squid guys that were a pain.

As far as SWTOR the vast majority of players are f2p scrubs (what I mean is, they are trash talking "whales" all game and complaining all game in Fleet/world chat about f2p) and so I've left the game. I may come back depending on SWTOR news but f2p gamers I try to avoid. I used to love to engage them but now it's just like there's so many f2p gamers that its not like a novelty fun game of banter back and forth...it's like they got an army lol. So to avoid drama I mostly avoid f2p titles or get my feet wet with a night of playing to scope it out.

I realized my post was a bit tacky but I logged into EH on SWTOR and immediately saw people complaining on Pub Fleet about f2p. Lol. Maybe I should have screenshotted. Is it proof or coincidence? I don't know...but I did edit my post to be a bit more fair.
Vanguard - Paladin. But as a previous poster mentioned all classes in this game were awesome and unique, the combat system, 2nd to none. Monk and Blood Mage, healing/dps classes, broke the mold and are yet to be copied....still holding out hope this title gets revived. Loved this game.
My favorite class is my Necromancer EQ1, it has so much versatility, and was fun to play (minus one expansion).
UO - The old do everything class, think people liked to call it the tank/mage. I also had a lot of fun playing my melee/bandage fighter, it could be exciting when their was a lot of hard hitting stuff on you, health yo-yoing.
DAoC - Scout was fun, but I missed the pre-nerf times for the most part, but was still much more fun than my Armsman (wife was a cleric, so was a good pve combo to level) I started with.
Vanguard - Ranger/Disciple....Druid when they broke pvp was silly (could kill most people using instant skills/spells/items).
SWG - TK was fun, if a little mindless pve wise.
Rift - had some same build, that played like the TK from SWG, melee cleric with AE healing or single target, that you could make big macros for....Not a big fan of the put everything on 1 or 2 buttons, but when that's the way things are.....
Archeage - I play a archer, it is far from OP, but I just am not a big fan of the melee classes, and I like the mage classes, but not for pvp (even though they are probably the strongest if built right, with good gear). Melee is cheapest to be good at (Darkrunner).
I think the most fun I had was playing my fire/radiation controller in City of Heroes. I leaned her fire control powers towards the more damaging end, and I concentrated on healing/buffing with her radiation powers. That way she could do fairly well on her own if she had to, but really shone in a group -- literally! Loved that green glow...and seeing teammates heal up. And the control powers that would lock down the villains, or make them run away, or best of all stagger around in a daze... all while losing HP... yeah, I miss it. One of many things I haven't found the match of in any other game.

Wow - Druid Best class ever.. shapeshifting and can do it all. Shadow Priest = runner up
DAoC - Nightshade. speedy rogue with spells. so much fun.
Or a Bard in pretty much any game. Bards are ALWAYS good.
The way mmo's were: Community, Exploration, Character Development, Conquest.
