Because risk is exhilarating. Competition is exhilarating. And it encourages smart playing.
EQ2 death penalty is a step up from WoW PVP but it still doesn't add any sense of loss when you lose something. When you get killed all you loose is a tiny bit of coin (unless you are a moron and don't bank regularily) and MAYBE a random item that you picked up (again if you don't bank regularily and carry around unattuned items, hello moron you deserve to lose it). But there's no real fear of losing anything and thus no real excitement in the PVP. It is fun though.
