I'm sure I'd get bored after a year or so, but there are enough professions to level up to keep it interesting. I can easily imagine myself spending a month working on a template for each profession, then another month perfecting it / getting gear / pvping before moving onto the next. Hell, I spent 5 months as a pikeman when the game first released before I started moving on to other professions.
Community and economy should also help with the isolation of living on a desert island and I can easily see myself going somewhat insane, grinding out jedi and having my entire desert island life revolve around roleplaying a lightside jedi (assuming I have shelter and food drops and am isolated).
On the other hand, I can also see myself spending months just building an awesome living place, Robinson Crusoe style, which would be more fulfilling. That and fishing, and ofc I'd have to make myself a bow and arrow and spend ages convincing myself I was a real hunter! And exercising - if I have shelter, food drops and a computer the temptation would be to veg out for years, so gotta remember to get some exercise!

I'm with someone who is 33, she is the most beautiful girl I've ever seen, and I don't quite understand how it's possible but every passing year she gets a little more beautiful to me. She knows me so well and has the ability to sometimes say the perfect thing at just the right time. At the risk of getting sappy, it really feels like we were designed for each other. We have a 2 year old son together.

Yep me too, City of Heroes with the latest update! Wanted to try a Savage Melee/Willpower Brute and level cap another D/D/D scrapper. And of course I want to play my ubiquitous Invul/Super Strength Tanker again!

Well, I chose SWG because it is a game designed for longevity and community which, considering the situation of being trapped on an island by yourself, are probably the two most important things.
If the timescales / situation were different I'm sure I'd choose other games. For example, if I was only going to be trapped for 6 months, I'd choose LotRO, patched up until just before first expansion. The high quality PvE and combat system of that era would be perfect for 6 months isolation on an island, I'd be able to cap a character and complete all raids (though, probs not enough time to max out gear) and enjoy the pvp. If I had too much time (1yr+) LotRO wouldn't be a good choice because it didn't have enough content.
Relating back to the gf situation, the same logic applies. If you're going to be trapped on an island, you'd rather have the person who has the most depth and is the most interesting, rather than a vacuous bimbo. However, if you're only there for a week, bring the bimbo :-)

I'd say FFXI before they made it solo/casual friendly. The entire gameplay revolved around grouping and grinding for hours on end, so that would help with lonliness. Plus plenty to keep you occupied for ages trying to get weapons like Excalibur.

I'd be more concerned about food, water, and shelter.
How about as a social experiment a company puts you on an island with solar cell setup for electricity. A hut. Food and water dropped off by air weekly. You're given a gaming computer with sat-modem. And a firewall that only allows access to one MMO.
My answer would be Second Life. Because some don't consider that an MMO my second answer would GW2. I'm assuming no money for any type of purchases.
