Jedi are kidnapped while still small children and spend many years being indoctrinated. In such an environment, their will is shaped into one unlikely to seek freedom rather than slavery. Who knows what their will might have been if they were not treated as slaves?

The value of killing in defense is dependent on what you are defending, and why you are defending it. If you are defending something because you value it, that is good. If you are defending something merely because you were told to, or because you believe you "should" or "must," according to the orthodoxy of the Jedi Order, it may not be evil, but it certainly is not good.
As to the Sith, I would say the one you describe was shortsighted, but if he demonstrated a willingness to kill me for my lunch money, and I refused to give it to him, my death would have been a kind of natural selection, and so nothing for others to waste time mourning. We don't see the jedi as evil because they were always helping people out, but they chose who to help out, based on their code. and they are willing to cheat, murder and lie their way through a movie to do what they've been told. sith will do the same thing, but are viewed evil because they didn't write the history books.

A Sith who will kill you for your lunch money if they desire it. Or a Jedi who kills only to defend and if there are no other options?
The correct answer is: It doesn't matter because all the pre-existing history of the Sith NOT specifically covered by the 6 Star Wars films and the Clone Wars cartoon are deemed Expanded Universe and therefore not canon. This also covers the entire Sith Code as it is never brought up specifically in the films.
So, by the official Canon, the Sith are evil. They are only ever spoken of as evil, and the only representatives of their tradition that we see are about as evil as they come. The case can be made that Vader is merely misguided, but Palpatine is blatantly evil.
Though an individual may look at it in any way they wish, even in the Expanded Universe the Sith are very, very rarely ever shown as anything other than evil. You could say that they're standing up for their individual rights, but their actions are never such. You could say that the Sith have been maligned by various contributors to the Star Wars universe lumping Dark Jedi in with them but the Dark Jedi are directly tied to the Sith. While the original Sith race was a relatively peaceful one, they did not delve into the Dark Side of the Force until exiled Dark Jedi came to their world following the Hundred-Year Darkness. Their arrival brought the Dark Side to the Sith race, and ended with the entire society taking up the Dark Side path. However, as all this information comes from the Pro-Jedi propaganda of the KotoR games and Tales of the Jedi, it can be considered dubious by a true Sith follower.
Though the mighty God of the Force, the flanneled one of a thousand beards did once say:

The value of killing in defense is dependent on what you are defending, and why you are defending it. If you are defending something because you value it, that is good. If you are defending something merely because you were told to, or because you believe you "should" or "must," according to the orthodoxy of the Jedi Order, it may not be evil, but it certainly is not good.
As to the Sith, I would say the one you describe was shortsighted, but if he demonstrated a willingness to kill me for my lunch money, and I refused to give it to him, my death would have been a kind of natural selection, and so nothing for others to waste time mourning. Of course, this assumes that I am reading your example correctly, and the fundamental desire of the sith in question was to have my lunch money, not to kill me.
