Taste is always a subjective matter, but my time with GW was short lived any ways, so that colors my opinion.

I vote for ragnarok online. Its the only mmo aside from ff11 that i regularly have playing on my phone. And the ff11 ones i have are the piano collections.

EVE Online's music is quite incredible. It's non-intrusive while being epic and suitable for the environment. There are times it will change when you're on missions, but you can also just use the in-game jukebox to cycle through whichever songs you want to hear.
This is i think a very subjective thread...in my particular opinion i really did enjoy the music in Lineage 2, even had the Giran and Gludio soundtracks in my MP3 ... but thats just me....FF11 had some really nice tunes aswell.
I think out of all the MMORPGs I've played, I sat and got lost in EVE music the most. I would just zone out to it and sit there in my ship doing nothing for 20 - 30 minutes at a time. It was so atmospheric and really helped to pull you into the setting.

Bingo, I often just sit and listen to the music. Then it makes me re sub. Not even close of a contest IMO.
I will not play a game with a cash shop ever again. A dev job should be to make the game better not make me pay so it sucks less.
To date only FFXIV's Music trumps any from FFXI and especially in all MMO's I've played! Here's my list!

I'd say my favorites so far are:
Guild Wars 2 (Always liked Jeremy Soule's music)
Vanguard (The music is just so great, gotta find the OST)
LOTRO (It felt fitting and added to the story a bit I think)
WoW (Wasn't fond of Vanilla's OST but post it turned out great enough for me to stop using that soundtrack addon)
I keep an eye. . . or rather an ear for great sounding music, regardless if I've played the game or not.
So sayeth me.
You know what's fun about chaos? I do, but I won't tell.

Unfair advantage given to SWG. John Williams is the best score composer of our time.
FF games always pull out some nice music.
I'll throw Allods Online into the mix too
