I must say neverwinter nights, because of the level editor, as you can do everything but make your own game with it. Hell, even remake some of the other games on this list if you have enough time on your hands.

I have seen browsergames where you can play like this. But the mmorpg genre is pretty much at its childhood, so we might have to wait a while for such an ambitious game to come around. It would be great, though..
