UO pretty much started it all, there were others prior, but it pretty much got it started main stream. It had amazing PVP, great skill system, and great sandbox gameplay.
AC1 had a very interesting take on leveling, awesome customization, and combat that was exciting and fun. I still miss the days of being surrounded by tuskers and olthoi.
Finally DAOC. Some of the best PvP to be had. One of the few games out there were a small coordinated group could masacre idiots who didnt know how to play the game very well.
Nostalgia time!
I remember grinding Mattes to find that pelt for the Hoary Mattekar Robe. Later on I ended up buying a fake one from a vendor outside one of the destroyed cities. Tusker and olthoi...so fun. Outside of Shoushi I think it was, I used to grind mattekars by life draining them through the wall. It was totally an exploit, but it was still risky as sometimes they would get in one hit on you through the wall. Typically that one hit killed you.
WoW on top, just can't get around that fact, its not the game itself I love, but I've played it the most and almost always with rl friends so its been great. But other than that:
Anarchy Online - Played from beta through launch, and no matter how bad launch was, something about the game hooked me and was great fun for 4+ years
EQ - Played from early beta uptill PoP. loved the pacing of the game, but the almost bi-annual expansion crap annoyed me.
WoW - Beta through Wrath. Enjoyed the game all through beta as it was something new and picked it up at launch because 60% of my AO guild decided to give it a shot. Just feel the game has become less an MMO and more a Lobby/Raid game. Hopefully Cataclysm breathes a bit more life into the actual world.
There are 3 types of people in the world. 1.) Those who make things happen 2.) Those who watch things happen 3.) And those who wonder "What the %#*& just happened?!"
Asheron's Call 1 - Great customization and variety of characters and items, in depth combat, huge world just riddled with content and flavor.
Pre-CU SWG - Last of the old school sandbox MMO's (perhaps with the exception of EVE, however I really didn't care for EVE all that much myself). It's just too bad for everyone that Sony never concentrated on fixing the game while still remaining true to its original vision. But instead devolved into the essence of a corporate preteen, trying hopelessly to imitate a shallow and unreplicable pop phenomena.
UO - As with another poster, I didn't play the game either. I was kind of sick of isometric view at the time, having played a lot of the single player Ultima games just before release, and I took a pass on it. But I know enough about UO to say that I wish this was the general game design model the industry had followed, and not the EQ1/WoW one.

That Guild Wars 2 login screen knocked up my wife. Must be the second coming!
EDIT: Yes....what this guy quoted below says about WoW is spot on with my views, and it addresses a couple of the reasons I can't put it in my top 3, but I could if it was top FOUR..

1) SWG pre-NGE (The community feeling was much stronger pre-CU, but personally enjoyed the actual gameplay better during the CU period).
2) UO - I never really got into it heavily, but mainly because I'd have spent to much on phone calls. It was ground breaking for its time.
3) Second Life - For the creativity and community.
